Is the right weight, length, and is amazingly sharp. Now I understand when a chef (Emeril)says that sharp knives are safer. You don't have to struggle or pre-pierce items like tomatoes to slice them very thinly. We have purchased seven knives from this collection and like every one of them.

This Knife is very sharp, even right out of the package. Works great, just watch out for your fingertips.

Great knife. Sharpe. Use it all the time. great for cutting the onions and peppers etc.
There is better for less November 9, 2009 Shad Prichard (Texas) Man I had thought this was going to be "the knife" and really I was not all that impressed. It looks fancy and has all the looks but falls short of being the go to knife. I tried cutting veggies and meat and I found myself digging in the drawer for a different knife. I'm no expert at this kind of stuff but I would say Look around....you will more than likely find a better knife and a better price.
