Henckels Chef Knife History
The Henckels brand was founded in Solingen, Germany in 1731. Henckels has two divisions. The Zwilling J.A. Henckels division is known as “The Premium Brand.”
It manufactures forged knives with the Twin model designation, primarily in Germany. J.A. Henckels International is "The Value Brand" division that produces less costly, mostly stamped blade knives and cutlery, often manufactured in China or Taiwan.
J.A. Henckels Twin series is the Premium Brand but are a value leader because the quality of these knives is so darned good. The quality of a knife is decisively influenced by the grade of steel used. The perfect blend of corrosion resistance and hardness are achieved by the optimal ratio of carbon, chromium and other components, and the precise sequence of heat treatment during blade manufacture.
After 275 years, Henckels "has it right" yet still strives toward perfection. Twin Cermax M66 blades are crafted from microcarbide steel, a molten substance atomized into a powder and then compacted under intensely high heat and pressure.
The result is a hardness rating of 66 Rockwell, which allows the blades to be brought to scalpel like sharpness and ensures that they retain their edges remarkably well. A Henckels chef knife complements every cook and any kitchen.
