GLOBAL COOKS KNIVES
Global balances their knives with a hollow handle filled with just the right amount of sand. Global uses this method rather than using a full tang and a bolster to balance their knives for two reasons. First, it is more precise than using a tang and a bolster, and because Asian knives typically do not have bolsters which are considered a hindrance to slicing and sharpening. Other unique features of Global knives are their smooth contours and seamless, all stainless steel construction which eliminates food and dirt traps offering the ultimate in safety and hygiene. Global 7-Inch Oriental Chef's KnifeThis 7-in. Asian Chef's Knife has a sharp upward curve and thicker "belly" than a traditional cook's knife. Global 7-Inch Deba KnifeThis 7-in. Asian Deba Knife is sharpened on the right side of the blade only, making it suitable only for right handed cooks. The mirror finish near the blades edge encourages ingredients to fall away from the knife and allows the cook to keep ingredients pristine. This knife is relatively heavy. Thick at the back, the broad, 7-inch blade, designed for butchering fish and chopping hard vegetables, carries enough weight to chop through fish bones. For clean, low-friction cutting, the blade is tapered to an edge on only one side so it's even sharper than other Global knives.
Bunmei 7-3/5-Inch Deba KnifeThe shape, weight, and wood handle--which has a ridge to ensure a secure grip--are traditional, but the blade is made of thoroughly modern, extra-hard, molybdenum/vanadium stainless steel so it retains its edge longer than high-carbon stainless-steel blades. For clean, low-friction cutting, the edge is "face-ground" on the right side only with a long taper at an acute angle and comes from the factory razor-sharp. This knife should be honed only with a synthetic whetstone or a ceramic whetstone and hand washed. (ed.) This is the knife that the character Hattori Hanzo used to make sushi in the movie Kill Bill.
Global 5-1/2-Inch Vegetable KnifeThis 5.5-in. Vegetable Knife has a unique blade shape that encourages the cook to perform a slicing motion. A great all purpose knife for those with small hands or those that feel more confident working with shorter blades. Stainless-steel handles are Global's most striking feature. They're molded to fit the hand and dimpled to resist slipping. Smaller around than many European-style handles, they're easy for small-handed cooks to grasp, and seamless for sanitation. Global recommends using a ceramic sharpener or a diamond steel instead of a metal sharpening steel for its knives, supplemented by a synthetic whetstone, a ceramic whetstone, or a Shinkansen sharpener.
